What baker’s percentages mean

Baker’s percentages treat flour as the 100 percent baseline. Every other ingredient is expressed as a percentage of the total flour weight.

Changing the batch size keeps the ratios the same. Hydration is the water weight divided by flour weight, multiplied by 100.

A simple example

500 g flour (100%) + 325 g water (65%) + 10 g salt (2%) + 1 g yeast (0.2%) = 836 g dough.

Total dough weight includes every ingredient. If you enter 500 g as your dough weight, that is the whole batch, not just the flour.

Make it repeatable

Change one ingredient ratio at a time when experimenting. On iOS, save a formula to your library and duplicate it before trying a variation. Open Bake mode for an ingredient reference while you mix.
